The heat and humidity out here in Southern Ontario has got everything feeling a little heavier, from the pervading scent of honeysuckle and lilies, to our bodyweight. We've also got these caterpillars invading the whole region from Trevor to Simon (Lake Ontario - Lake Huron - Lake Erie regions). They call them gypsy moths. Eating everything up. Falling on your head, crawling up your leg, most parks are covered with them.
We sip on some Hazelburn 10 as we ponder on this tonight, our second review coming out of Springbank distillery. 46% ABV. $100 CAD. Ex-bourbon casks. Campbelltown region.
We sniff around:
Scott gets a little citrus. Maybe a little chlorine...
Trevor pulls some sweet apples. Maybe Jolly Ranchers apples even. Very crisp.
Simon gets that candy sweet malt and apples. Little honey.
Kyle goes for brown sugar.

Scott starts us off with sour apple. Sweet syrup there as well.
Trevor agrees, there's a bitterness, like fermented apples.
Simon gets a mossy note, almost like it's a little peated. Almost moldy like a blue cheese note.
Trevor says the mossy reminds of a mushroom note almost. Some fungi in there.
Sean says it's oaky.
Kyle gets a nice mild saltiness.
Richness salty spiciness to it. Complimentary. Strong finish.
Reviews: Sean's pick. He likes the mouthfeel, the strong finish. He lands at 79. Kyle's enjoys it, likes the mild saltiness, smooth, he lands at 72. Trevor thinks it's doing a few things very well. He likes the mossy/fungi things it's got going on, with bitter/sour notes and sweet notes too. He bumps this to 81 because of its few interesting notes. Simon likes the funkiness, something you should expect on his shelf at some point for sure. 83 for him. Scott finishes off with 79. Good mouthfeel, good mix of complimentary flavors. Averages out to 78.8.
Overall: This is a fair value scotch. At $100 the overall rating is the same as the value rating, so 78.8. It's a fun twist on the typical apple forward profile, but likely something you need to be more experienced to appreciate. I don't know that this would've rated as well with us when we first started out. Not really something we will recommend to people, but we definitely enjoyed it, and Simon in particular is planning to stock up.
